Green Apple and Arugula Salad with Balsamic Glaze

What You Need:
– 4 cups baby arugula leaves
– 1 large green apple, thinly sliced
– 1/4 cup walnuts
– 1/4 cup crumbled goat cheese
– 2 tablespoons Nivel Alto™ 100% Spanish Extra Virgin Olive Oil
– 1 tablespoon Nivel Alto™ balsamic vinegar
– 1 tablespoon Nivel Alto™ green apple glaze
– Salt and pepper to taste

Instructions:

1. Rinse the baby arugula leaves in running water and pat them dry with a kitchen towel.
2. Slice the green apple into thin pieces and set them aside.
3. Toast the walnuts in a dry skillet over medium heat for about 3-4 minutes or until they turn golden brown. Once done, remove from heat and let them cool.
4. In a small bowl, whisk together the olive oil, balsamic vinegar, and green apple balsamic glaze until well combined.
5. Add the arugula leaves to a large bowl and pour the dressing over the top. Toss to coat evenly.
6. Add the sliced green apples, toasted walnuts, and crumbled goat cheese to the bowl.
7. Season with salt and freshly ground black pepper, to taste.
8. Toss the salad gently until all of the ingredients are evenly distributed.
9. Plate the salad and serve immediately.
