Balsamic Spanish Rice

What You Need:
1 cup long-grain white rice
2 tbsp Nivel Alto™ 100% Spanish Extra Virgin Olive oil
2 tbsp Nivel Alto™ Balsamic Vinegar
1 small onion, diced
1 green bell pepper, chopped
2 cloves garlic, minced
1 ½ cups chicken or vegetable broth
1 can diced tomatoes
1 tsp chili powder
Salt and pepper to taste

Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the diced onions and chopped bell peppers and sauté until soft, about 5 minutes.
Add the garlic and continue to cook for another minute, stirring frequently.
Add the rice to the saucepan and stir until the rice is coated with the olive oil mixture.
Pour in the broth and balsamic vinegar, then add the diced tomatoes, chili powder, salt, and pepper.
Bring the mixture to a boil, then cover and reduce the heat to low.
Allow the rice to simmer for 18-20 minutes or until the liquid is absorbed and the rice is tender.
Remove the saucepan from the heat and let sit for 5 minutes, then fluff the rice with a fork before serving.
