Marinated Garlic Tomatoes

What You Need:
1 pint cherry tomatoes halved
½ red onion, thinly sliced
3 cloves garlic, chopped
1/3 cup Nivel Alto ™ 100% Spanish extra virgin olive oil
1 tablespoon Nivel Alto ™ balsamic vinegar
1 tablespoon fresh basil, chopped
Salt and pepper to taste

Instructions:

In a medium bowl, combine halved cherry tomatoes, sliced red onion, and chopped garlic.

In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, and fresh basil.

Pour the olive oil mixture over the tomato mixture and stir until well-coated. Season with salt and pepper to taste.

Cover the bowl with plastic wrap and refrigerate for at least 3 hour or overnight to let the flavors meld.

Remove from the fridge and let sit at room temperature for 10-15 minutes before serving.

Serve as a side dish or as a topping for grilled meats, fish, or pasta.
